The Guillermo's enjoyed this fresh local warm cheese, queso de hoja. It was more like a mozzarella instead of a softer queso de hoja. They are open after 2:30pm. We went around 4 pm, and they only had very large options available.
The cheese is great and the ambient while watching them make is friendly and fun. Over time I learned that during hot sunny days the cheese is ready earlier between 3:30 and 4:30 but on cool rainy days its ready later. Also I learned that you shouldnt put the cheese in an ice box. Keep it cool and floating in a bowl of cool water but not too cold. Eat it soon. The fresher the better.
Good stuff. More towards mozzarella flavour as mentioned before. Not s huge store. Very small and it can be missed easily.

The most delicious leaf cheese I've ever tasted. It's worth making a detour to stop and grab some 🤤 and if you have time, you can sit down and enjoy the peace and quiet.
